Frisco Fastpacs honors the life and legacy of Jackson Mitchell, a remarkable young volunteer whose compassion and generosity touched everyone who knew him. Though his time with us was far too short, his impact will be felt for years to come.
From a young age, Jackson showed a deep commitment to helping others, especially those facing food insecurity. He was a strong advocate for ending childhood hunger—quietly paying for meals at school for students in need, sharing his own food without hesitation, and ensuring his classmates had the nourishment they needed to succeed. His kindness, empathy, and selflessness embodied the very spirit of the Frisco Fastpacs mission.
Jackson reminded us that one person, regardless of age, can make a profound difference. His actions inspired his peers, neighbors and our entire community to look out for one another and to give generously, without expecting anything in return.
We are forever grateful for the light Jackson brought into the world and for the example he set of compassion in action. His legacy will continue to inspire service throughout our community. We are heartbroken by the loss of our dear friend and longtime volunteer, Jay Burnside.
Jay and his wife, Pam, have been part of the Frisco Fastpacs family for years. They supported our mission not only as generous donors but as dedicated volunteers who delivered meals to Frisco ISD schools every week. Jay loved making those weekly deliveries alongside Pam, and we enjoyed seeing them together. His kindness, dependable presence, and devotion to both Pam and our mission left a lasting impression on everyone he met.
The staff at each school looked forward to seeing him, often asking about him when he wasn’t there. Jay and Pam got involved with Fastpacs because they didn’t want any child to go hungry. That simple, powerful belief guided the way they served and cared for others.
While we will deeply miss Jay, we are grateful that Pam will continue to serve with us. Her strength, compassion, and ongoing commitment are a meaningful part of his legacy.

Frisco Fastpacs mourns the loss of our beloved volunteer, Kellee Gilmour, who faithfully served our mission for over 10 years. Kellee’s dedication, warmth, and unwavering compassion made a lasting impact on our organization and the countless children she helped feed. She was a true example of service and kindness, and her presence will be deeply missed by all who had the privilege of working alongside her.
To honor Kellee’s memory, Frisco Fastpacs is accepting memorial donations in her name. Contributions will help continue the work she so passionately supported—ensuring no child in Frisco goes hungry on the weekends.
